This pork knuckle recipe is my favorite of all the methods I know. Now I’m sharing this method with you, which allows you to make extremely soft, tender and golden pork knuckle — all with minimal effort.

Preparation process:

Preparation: First, I wash the knuckle thoroughly in cold water, then dry it with paper towels. After that, I carefully remove any remaining hairs with the flame of a candle or lighter. This way I get a clean, light-colored knuckle.

Cooking:

I place two pork knuckles in a suitable-sized pot, sprinkle them with salt and cumin. I pour cold water over them and put them on the stove. When the water starts to boil, I use a skimmer to remove the foam that has accumulated on the surface until no more foam forms.

Then I cover the pot and reduce the heat to the lowest setting, then cook for an hour and a half. I turn the knuckles occasionally to cook evenly.

Making the honey-mustard glaze:

A few minutes before the end of cooking, I prepare the simple sauce that gives the knuckles a nice softness and a golden brown color. To do this, I mix a portion of mild mustard and honey until smooth.

Baking:

When the knuckles are cooked, I remove them from the broth and place them on a plate to cool slightly. Then I spread them thoroughly with the honey-mustard sauce, making sure to coat all sides evenly.

I put the knuckles in a baking bag and then place them in the oven, which I have previously heated to 175 °C.
Baking time: I bake the knuckles in the oven for about 30-40 minutes, until they get a beautiful golden brown crust.
